Zucchini and Quinoa Fritters

  • These are great on their own as an easy snack or pile them high with your favourite toppings.

Ingredients: Zucchini, Quinoa, Lemon Juice, Lemon Zest, Celtic Sea Salt, Baking powder, Bi-carb Soda

How to Prepare: Defrost in the fridge overnight and eat cold. The easiest way is to pop in the toaster for that just out of the oven feel, or reheat in a pan for a few minutes each side. Great on their own or top with my nutritious hummus and some sprouts. A great bread alternative with soups and meals.
